Normally, one would choose a view that grouped by conversation (which is almost the same as the subject but is the read-only field that Microsoft likes to use because they make it behave in special ways). Then, within the groups sort it by date, either ascending or descending, according to your preference. You can set this up using the field chooser and dragging conversation into the area above the field display, and then using the View | Arrange by to select sort in the direction you want.
