Changing field type in Contacts
 
Is it possible to change the Profession field to one with a closed set of
options in a drop down window?

Can you point me in the right direction if so.

What you're describing is not a change of a field's data type (which is not possible) but displaying a property with a different control. That is certainly possible by modifying the contact form. THese pages should help you get started:
