I am wondering if you can edit the 1st page of the default task form? When I
try to do so, all of my edit options are disabled. I can edit the contact
form, but not the task. Please advise.

If you build a custom Task form based on any other item template, you will
not get any Task related functionality.

You're basically limited to extending the Task form, not replacing it.
