You can go for a manual approach, once she is done reading the mails she can select them and then mark them as "unread" by right clicking on them and selecting this option.

It is possible that you have an add-in installed that changes your default folder for sent items.
Can you post a list of add-ins installed for Outlook (screenshot)?
