Default enhanced outlook filter

Look at the Utilities pages at www.slipstick.com to see if such an addin
exists.

I'm not sure if any work on the subject, but there are add-ins that will do that based on the sender's address.

See http://www.slipstick.com/addins/auto.asp.

FWIW, I think moving mail to folders created for each email address is a bad idea and making folders for each subject is an even worse idea. Use the tools (views, search folders, categories) in Outlook to manage your mail and you won't need more than a handful of folders.
