Is there a setting or utility to "cross off" previous days like you can on a
paper calendar?

Will someone please add that as a feature request? Seriously, how hard could
it be?

Actually, it could be very hard, especially with the calendar overlay
feature in Outlook 2007. Microsoft is aware that we see a fair number of
requests for such a feature but I don't believe it will be in the next
version.

See http://www.outlook-tips.net/archives/2008/20080520.htm for one method.

Can't you tell the difference between today and the future and yesterday and
the past without this? Seems easy to me to tell which days have already
occurred.
