Is there a way to "cross off" previous days in Outlook calendar?
Is there a setting or utility to "cross off" previous days like you can on a
paper calendar?

Actually, it could be very hard, especially with the calendar overlay
feature in Outlook 2007. Microsoft is aware that we see a fair number of requests for such a feature but I don't believe it will be in the next version.
