Default Categories and colors

I like the category feature for my appointments. However, now with Outlook
2007, my calendar is so bloody colorful, it's diffcult to read, as I try to
keep it organized.

Is there a way to use categroies, but turn off colors?

Well, you could edit each category to assign no color to it. Or consolidate some categories by using the same color for them.
