Can I send a meeting request with the option of two times?

I have a meeting to send out to a number of employees, this meeting is being
offered a couple of different times and they only need to go to one. Can I do
that in one meeting request? Or do I have to send out two?

You can create 2 appointment items with the different time and insert them into a mail message instructing the recipients to select a time and respond.
