Default Outlook Meetings + Exchange Server

Hi. We're a small company of about 40 people trying to determine if we should
use Outlook in order to schedule meetings, resources, rooms, etc.

What additional functionalities would we have access to if we used Exchange
server in ADDITION to Outlook? Or in other words..what is the difference is
using solely Outlook for this purpose vs using Outlook + Exchange?
