Default Appointments older than 60 days?

How can I have my Outlook calendar retain meetings and appointments beyond 60
days? The only ones that stay on my calendar are reocurring ones.

Turn off AutoArchive or change the synchronisation settings with your phone.
One of those two will be causing it.

Tools | Options | Other | Archive - un tick the top box.

disable archiving or if you sync with a handheld device, check its settings.
