My training department still runs off of outlook2000. The training calendar
is available via exchange; however, it is not very user friendly. It would be helpful if I could color code the events. Currently, it is all black and white. Seems to blend all together, especially when courses are for several days and overlap with others. |

Nope. Calendar color labels were added in Outlook 2002. They don't exist in Outlook 2000.

If you upgrade to at least Outlook 2002 you'll have that option.
