Default Linking an out of office meeting to your Out of office assistant

It is possible to set a meeting as Out-of-Office (show time as ...) .
It is also possible to set an out of office assitant on your mail.

Is there a way of linking them so that when you have an out of office
meeting, your out of office assitant kicks in without you having to set in on
the day ?

No, not at this time. If you use Outlook 2007 and Exchange 2007 you can set
up the OOF ahead of time, with start and end times.
