Version of Outlook? I know of a situation in Outlook 2010 that this happens,

Version is Outlook 2007. I create a new appt. I add a start time and date.
I add an end time. This changes the end date to the next day. Then I must change the date back to the same date as the start date. Has been going on a long time. I choose "New" when in Calendar from the upper pull down menu.

I can't repro so I don't know if its something you are doing or a bug. The
