If you want to create a template for writing messages, create a stationery
with paragraph styles.
For one message, edit the source of the message.

No, I was referring to the pull down list on the Rich Text formatting tool bar

normal
formatted
address
heading1
...
heading 6
numbered list
etc....

Theses would be handier to use if I could edit the definitions

"You can't edit or change what is there." is true, but you can change how
each is applied using a style tag.

My advice is the same.
I created a stationery with this addition to the HTML code:
style
H1 {color: red}
/style

Now when I select that stationery and heading1, the color is red.

What exactly would you like to change?
