Default Edit option on outbound email

Before I had to reload my new operating system, I had 3 options on the
bottom of the 'Create' window. One option was to 'Edit' the outbound file
in it's html format. I can't remember the name of the other two except one
allowed you to view the text as the receiver would see it.

I can't see how to put that in again. A permanant solution would be
appreciated.
