How do I set up rule so that messages from parties not on my approved sender
list (which includes all entries in my address book) go to a special folder?

Create your Folder.
Tools, Message Rules, Mail, New
If the From line 'contains people', Move to 'specified folder'.
Click 'contains people'
Click Address Book
Highlight the first name
Scroll to the end of the names
Hold down the Shift key
Left click the last name
Click From

Click 'specified folder'
Select your folder

Click Options
Select 'does not' contain
and select 'or'

Note: anytime you add a name to the Address Book, add the name to the rule.
