Once you have scanned the document, compose a new message and then either
use Insert | File Attachment and browse to the file, or drag the file from
Explorer and drop it onto the new message window to attach it.

Your scanner should have an option to Scan To E-mail. Otherwise, scan the
document to a folder on your HDD and then in a new message window, Insert |
File Attachment and point to where you saved it.
