Other than alphabetically in the "To" column, what is the default order of
messages in a Sent folder? Can you secondarily organize these messages by
date?

View | Sort By | Sent is sorted by date.

There are only two options for OE column headers.

Inbox - Deleted Items - and User Created folders share the same layout. If
you change one, you change them all.

Likewise for Outbox - Sent Items - and Drafts. Change one and you change the
other two.

Ctrl + Shift + F
Edit, Find, Message...
Search by name.
Sort the results by date.

Sometimes if you order by one column header and then order by another, then
it will have sorting by both, but sometimes not.

As Ron indicated, Edit | Find works also.
