Thunderbird has a nice little trick - by right-clicking on a sent mail the
option to 'edit as new' appears.
Is there a way of doing this in Outlook 2007? (except by pretending to
forward and faffing about)

Open Message, click on Other Actions then you can either Edit, or re-send.
The Resend option allows you to modify the recipient, the subject line and
the body text...
