How does one get rid of the annoying 'choose profile' window
that appears when I start up MS Outlook..?

Depends on your Outlook version, which you have chosen not to provide.

In Control Panel | Mail or Control Panel | User Accounts | Mail, click Show Profiles and at the bottom of the Mail dialog, select "always use this profile."
