Default Empty to Field on Sent Email

We are experiencing some issues after upgrading from Office 2000 to 2003.
Some sent emails have an empty to field.

The emails are being delivered ok & we are not receiving any NDR's

A quick search on google and quite a few people are experiencing this
problem but I can't see a fix.

I take this to mean that the To field is empty when you examine your Sent
Items folder, not that it's empty on the recipient's end, correct?

Correct.
I've been searching on google over lunch but can't find any solutions.

In your Sent Items, what is checked on ViewArrange ByCurrent View?

It is not a view setting because when you double clike to open the email up
you do not see any information in the to box.

OK. You didn't explain that before. Is this for mail you sent or are you
helping someone else who has the problem? Is it for one PC or more than
one? What type of account(s) are you using?
