Default One Calendar with update and access from seprate networks/offices

I have a user who works for two separate organizations, both geographically
and separate networks. Both organizations luckily use MS Outlook. I would
like to create one shared appointment calendar so both organizational groups
can view and update information on the calendar. Access would be limited to
only a few authorized administrators. What is the best approach to
accomplish this in Outlook? What would be a good reference to read and learn
about this?
