Default Outlook 2007 Beta 2

Outlook knows about your default account and uses that for new messages unless you choose to send with a different account. And it knows what account it used to receive each message and will use that account when you reply or forward a message, unless you choose to send with a different account. Each of your three accounts has its own return address, in Tools | E-mail Accounts.

.... unless, of course, these aren't three accounts at all, but three aliases on a single mail account. If you want Outlook to act like it has multiple email accounts, you really need mulitple email accounts.
