One thing that has confused me slightly is that I was sure that I had
a services option under the Tools menu previously, from which I could
create personal folders...but maybe I'm wrong as I know it does vary
dependant on version.
Anyway, I hope I have explained myself sufficiently...hopefully
someone can provide me with a solution before I crack up totally and
throw everything out of the nearest window!!! :-)

I'd appreciate any advice.

If I understand you correctly, you would like Outlook prompt you for a
profile before it opens, correct? If so, go to the control panel and
double click the "Mail" icon under the "classic" view. Choose show
profiles and select the option to prompt you for a profile.
