How it handles what? Please put all the necessary information in the body of your post, including the version of Outlook.

How it handles task mgt.
Outlook 2003
I right click an email and Set a Reminder.
Did I just turn it into a task?
Did I just turn it into an appointment?
Or is it just an email with a reminder?

The question may be too obvious, I think it is the latter.

I wish I could turn emails into Tasks. Email Subject to Task Subject,
Email Body to Task Notes, Email reminder to Task reminder.

It is the last.

If you want to turn an email into a task, just right-click it and drag it to
the Task folder, choosing one of the options that appears when you release
the mouse button and then fill in the rest of the details.
