In OL2007, open the contact, put the cursor into the note field, go to the
Insert tab and choose the thing you'd like to attach (file or Outlook item)

Open the Contact and drag the messages to its Notes pane.

However, why not just open the Journal and look at the data for that
contact?

Messages to or from the contact's address should be on the Activities tab of
the contact. They aren't attached - just indexed - and if you delete the
message from the inbox, it's gone from the Activities tab too.
