How can I remove the character that starts every line in e-mails that I
receive in Plain Text?

Default Plain Text E-Mail

Search and replace... the easiest is to copy and paste into word and replace
them. If you are replying you can do it within the email message (depends
on version and editor - replace may not be available.)

The sender replied (to your email) and they indented the quoted
content (your original message). Take it up with the sender.
