I really like the new To-Do Bar, but the To Do list shown there has the
exact same View (ie. columns, filters, sorts) as in Tasks.

Is there any way to make these separate? The To-Do Bar is so narrow, you can
really only see a 1-2 fields, while I like having 5-6 fields in the full
Tasks view.

click on the row of field names and customize it. if you are just removing
fields, drag them off.

But then that changes the fields that shows in the Tasks view. Boom, now my
Tasks list shows a single field.

Understand what I'm asking here (and I can't be the only person asking this,
am I?), how can I have it so that the list of fields shown in my To-Do Bar
is different than the list of fields shown in the Tasks view?

The tasks view does not use the same view as the to-do bar - but if it seems
to, reset the view on tasks and copy it then use the copy in the tasks
folder. (Show the advanced toolbar so you can see and choose new views
using the view selector).
