Default Follow-ups

I am using Outlook 2007 on XPSP2.

I am not really sure how these are supposed to work but I find that when I
set a reminder for a follow-up on a message and then change the start date
for the follow-up, the reminder gets set to one week after the start date.
Why would that happen and how can I prevent it?
