I have Outlook 2003 on a laptop that I use for normal email activity. I also
have a desktop with Outlook 2003 that I set up to only send emails using the
same email account. For some reason, I am finding that the send-only desktop
is still receiving email even when all the options for receiving are turned
off and disabled. There has to be a way to keep Outlook logged in to the
Exchange server to send notifications, but not intercept email intended for
another machine.

If you're using an Exchange account, then all the computers with which you
connect will all see the same messages. Why do you think this is a problem?
They don't "intercept" messages from each other unless you've configured
something incorrectly. Finally, where is the suggestion in your post?
