Default how do you see if an coming mail is being tracked? Settings?

I know there is a setting, I used it in my last job, you set your incoming
mail to show if it is being tracked.

ADd the tracking column to your inbox view. Right click the column header, then Field Chooser and drag the Tracking option to the column header and drop it where you want.
