Default 2007 design

My parents got new computer with Office 2007. We are not happy with the
"blue" background and design of Outlook and Word. (Personally, I think they
screwed up Word big time). The blue color and fonts of the menu bars are
hard for them to read. I thought if I changed the settings in the computers
display panel, under appearances, to a different color scheme that would do
it. The color scheme works with everything but Outlook and Word. They are
still blue. Is there a way to change the background blue color and font type
of everything? Thank you.

ToolsOptionsMail FormatEditor Options. Change the "Color Scheme"
drop-down. (Not a lot of choices, though.)
