Default Two Copies of Outlook Up at the Same Time

When I first installed Outlook 2007 I could get two copies of outlook
appearing on the screen at the same time. It was helpful to have Inbox in one
and switch to Contacts or Sent Mail. Then there were upgrades and now I can
not open two copies of Outlook at the same time. Is there a switch that I am
missing. Thanks
