I am trying to create a message to multiple recipients and want to hide their
names in "bcc". However, neither "cc" nor "bcc" are resident under the view
tab or anywhere else

If not using Word, click ViewBcc Field when in a compose window. If using
Word in Outlook 2003 or earlier, click the Options drop-down on the toolbar
and check Bcc. If using Outlook 2007, click the Options menu in a compose
window and you'll see a Show Bcc button there.
