The same way you filter them in the view -- View | Arrange By | Current View | Customize Current View | FIlter.

Sorry, I may have misunderstood your question completely, but that's what happens when you don't post a complete question, just a short subject. Please tell us what contact lists you're printing and how and in what version of Outlook.
