Default Show this folder... greyed out?

No, I'm not using roaming profiles. But I have customized the installation
of Office, I wonder if that would be an option I can set there? I'll have
to take a look.

Sounds like they're using a different mail profile on that machine.

There is a known problem with the deployment of Outlook mail profiles using the ORK tools that sometimes results in the Outlook Address Book not being installed -- even if it is included in the customization for the installation. Users can either add it manually or you can give them a second .prf file to run that adds it and then starts Outlook.
