Default How to stop Contacts activities tab from showing all my emails

The question/problem is when I forward a contact via email, the recipient can
see ALL my info (e-mails, etc.) that you see by clicking on the "activities"
tab. I've tested it w/a couple of co-workers and they can see all my info.

You can stop being paranoid about this. No one is monitoring the activities in your Outlook folders. The Activities page builds a list *on the fly* of items related to the current contact. It builds that list from the ****current user's**** Outlook folders. If someone has activities related to you, they'll see them in the contact record for you. THey're seeing their data, not yours.
