Default Underlining

When I enter information it automatically underlines the phone numbers and
e-mail address. I this normal. Can I remove underline?

No. Nor would you want to. Outlook checks the validity of each electronic
address you enter and it resolves it to a name. The underline is what tells
you it was successful in doing so.
