Changing Meeting Organizers
You don't need to cancel the meetings, but you do need to END them.
Then the new admin will need to make her own meetings new.
There really is no way to change the organizer.

emails are being deleted after I open them
Check your VIEW for a FILTERED VIEW.
Select VIEW on your Outlook menu.
Select ARRANGE BY
Select CURRENT VIEW
Then be sure that the MESSAGES view is selected.
