What version of Outlook, and what do you want to remove from the context
menu (or rather, what items do you want remaining)?
It is not possible to remove the items without writing an Outlook Add-In...

When the recipient opens the message, it notifies them that a receipt has
been requested and asks if they want to send it. I direct people to NEVER
